Margaret Atwood's The Year of the Flood tells the story of several characters surviving a post-plague world which is missing most of the human race. A band of naturalists called "God's Gardeners" are well prepared with their rooftop gardens and network of converts and charismatic leaders. Although honey is not vegan, their bee-whispering ways are most intriguing, as well as their use of herbs for medicine. They don't eat animals which becomes challenging as supplies get tight.
